It's convenient to already have a credit card linked to your Apple ID so that you can quickly purchase items from the iTunes Store. However, your account can be left wide open to further purchases that you might not have control over -- like your kids getting hold of your iPod Touch and buying lots of stuff!
To prevent this you can either remove the credit card details from your account, or create a new one that doesn't have any payment information. You might want to do this for example if providing your kids with an Apple ID so they can download free stuff (music, apps, iTunes U, etc.)
